Spinach Corn Pulao

Ingredients :

  • 1 cup Basmati Rice
  • 1/3 cup Palak(Spinach) Leaves,Blanced and pureed
  • 1/2 cup Sweet Corn,Boiled
  • 2 tbsp Oil/Ghee
  • 1 tsp Cumin seeds
  • 1 medium Onion,Sliced
  • 1 tsp Ginger-Garlic paste
  • 5-6 Black Pepper Corns
  • 3-4 Cloves
  • 1 Bay leaf
  • 2-3 Green Cardamom
  • 1 Star anise
  • Salt to taste

    Method :
  • Soak basmati rice in water for 15-20 minutes.
  • Then make a smooth puree of blanched spinach (When making puree don’t add any water) and boil the corn and strain it.Keep it aside.
  • Take a cooker and heat it up,add oil/ghee to it .
  • Add cumin seeds, black pepper corns, Star anise, Green Cardamoms, cloves and bay leaf. Stir for 1-2 minutes.
  • Then add onions and Stir till onions turn light brown, then add ginger garlic paste and stir for 1-2 minutes.
  • Then add the palak puree and stir well for 2-3 minutes. Add salt to taste and mix well.
  • Add boiled corn to it and mix well.
  • Drain the water from the rice and add the rice to this mixture and mix well.
  • Add 1 cup of water to it and mix all well.
  • Then close the lid and let it simmer for 1 whistle of the pressure cooker.
  • Spinach Corn Pulao is ready.Serve hot with raita.
